Cheesecake: Baby Steps
The ancient writer Athenaeus of Greece is credited with recording the first know recipe for cheesecake circa 230 AD. It was pretty basic and nothing like what we eat today. There was no cream cheese as we know it. The ancient Greeks would take cheese and pound it until a smoothe paste formed. It was then sweetened with honey, wheat flour was mixed in and then heated in a brass pan. Once cooled it was served. No eggs, no sugar, no vanilla! It was a very different kind of cheesecake. We've come along way since then!
